Lee Murdoch Named Executive Chef at Seaton House

Lee Murdoch has been appointed executive chef at Seaton House in St Andrews, taking over from Mark Drummond, who previously served in the role since December of the previous year. Seaton House, managed by Valor Hospitality, features 42 guest rooms and a diverse range of dining venues.

Murdoch will collaborate closely with chef and founder Roy Brett, creator of the Ondine Oyster & Grill restaurant within the hotel. Brett also serves as head of culinary for the UK and Europe at Valor Hospitality.

Career and Achievements

Before his current appointment, Murdoch was involved in launching the 140-cover Coal Shed steakhouse in Brighton in October 2024. His extensive career includes senior posts across hotels and restaurants in the UK, Asia, and the Middle East, notably at Trump Turnberry in Scotland.

He is also a recipient of the Royal Academy of Culinary Arts Award for Excellence, recognizing his contribution to the hospitality industry.

Future at Seaton House

As executive chef, Murdoch will oversee the hotel’s food and beverage operations, which include the Board Room, Bow Butts Bar, and Ondine Oyster & Grill, ensuring a refined and elevated dining experience for guests.
